So What Are Fresh Curry Leaves?

Curry leaves are native to Southern Asia. It is an herb that comes from a tree and is used in lots of East Indian food.

Fresh curry leaves looked like small, shiny lemon leaves. They smell pungently of curry. For storage, you can keep them in an airtight container in the refrigerator for up to 2 weeks or even freeze them. While dried curry leaves are also available, but they tend to have less flavor and aroma.

Curry leaves are carminative in nature and plays a key role in digestion. It has a mild laxative properties that helps in the excretion of toxic substances from the body. It also contains an alkaloid carbazole, that is an anti-inflammatory compound which help combats an upset stomach and also counteracts the effects of spicy food when taken with meals.

How to Add Curry Leaves to Your Food

  • If you love spicy foods, you can add curry leaves chutney with salt, chillies and tomatoes.
  • Curry leaves in dal (combined with other leafy vegetables)
  • Take 2-3 times a day to relieve diarrhea, crushed curry leaves with buttermilk

Cooking with Curry Leaves

Curry leaves soften when cooked. They are used to flavor rice, soups, and stews. To bring out its flavors, it is recommended that curry leaves be cooked in oil first. The sauteed leaves can then be added back, while the other ingredients are cooking.

Also curry leaves, when sauteed in spices and hot oil, can be used to drizzle onto finished dishes.

Eggplant Curry Recipe

Ingredients:
Boneless pork chop
Bunch Curry leaves
Chinese eggplant
Cooking oil
Cornstarch
Fish sauce
Garlic
Handful of pea shoots
Oyster sauce

Instructions:
1. Saute a small bunch of curry leave in oil, then fished them out.
2. Sear the pork and eggplant.
3. Put the curry leaves back in the pan with all the other ingredients.
