Spicy Pumpkin Soup
Ingredients:
15 oz pumpkin
4 shallots
3 1/2 cups water
2 garlic
2 cups chicken broth
2 tablespoon curry spice
2 teaspoon butter
2 teaspoon salt
1 unsweetened coconut milk
1 teaspoon ginger
1 teaspoon chili sauce
Directions:
1. Saute shallots using butter, until soft.
2. Add garlic, curry spice and ginger.
3. Stir in the salt, pumpkin, water, broth and coconut milk.
4. Simmer without cover, using low heat for 30 minutes.
